  • A Healthy Meal for the Whole Family!

    A Healthy Meal that Really is Healthy!

    Having a healthy meal, that is a “go-to”, that the whole family loves, is hard to come by.  Healthy meal plans are a labor of love.  This journey is never ending and that means being on the lookout or experimenting should always be in the cards, to find a new healthy meal.  The BEST meal we’ve been having lately.

    Here’s my husband talking about his favorite dish that he came up with!!

     Healthy Meal Recipe:
    • 2 Tablespoons of Tropical Traditions Virgin Coconut Oil. (This is the best coconut oil we have found.)
    • Melt coconut oil down, turn heat to medium or medium low.  (Otherwise you will be doused by hot coconut oil when you add the next items!)
    • Add 8 cups of kale, mix and make sure the coconut oil is evenly mixed up, stir every 30 seconds or so for about 3 minutes.
    • Add some Himalayan Salt, amount is up to you!
    • Add 1-2 teaspoons of Sriracha or other flavor you want to add.
    • At this point vegetables should be braised down and really soft.
    • Add 4-6 organic eggs or 3 eggs and egg whites.  Matt adds 1.25 cups of egg whites for more protein and less fat.  (The jury is out if it is really that bad to eat whole eggs.  Very debatable.)
    • Turn up heat a bit, mix and brown as much as desired.

    We buy Safeway’s organic pre-washed and cut kale. It has stems in it still but they get soft in the cooking process.  We eat this healthy meal once a day and it kind of depends on the day if it’s breakfast, lunch or dinner.

    Did you know kale has more calcium than milk and more iron than beef? ‪#‎craziness‬

    (Yes, the kids love it too) ‪#‎eatyourgreens‬  This is one healthy meal you do not want to pass up!

    Gluten-Free Lunch Ideas!

    Holla back ya’ll, you better believe I have delicious gluten-free lunch ideas ready to go!  I always try to balance out my salads with a few different ingredients.  I love adding fruit.  Lunch is served. 2 ?‘s 1/2 ? and 1 ? This is chopped romaine, chopped celery, grapes and hemp seeds. Not excited about the celery but I’ll deal with it!.

    Put the other half ? in my superfood shake (Shakeology), that counted for a (protein). When you don’t have any meat prepped, this is what you get. Couldn’t do the 21 Day Fix without my shakes!

    Gluten-free Chocolate Chip Cookies!!!

    I know there are a ton of family tradition-style cookies being made this time of year -but if you want a treat to have that is on the healthy side, these gluten-free chocolate cookies will do the trick! They freeze amazingly well, too!! I bet you’ll have all these ingredients in your kitchen right now so no need to brave the grocery store.  I love finding simple recipes that are easy to make and that my kids continually love!  I am always looking for new ones.  It is not easy finding gluten-free snacks that my kids can actually eat and this is one that works.  Give it a try, you will not be disappointed!

    Gluten-Free Chocolate Chip Cookie Recipe

    2 cups oat flour (I took gluten-free oatmeal and blended it in my Blendtec blender)
    3/4 cup rolled oats
    1/2 cups chopped walnuts (optional)
    1/2 tsp sea salt
    3/4 tsp baking soda
    1/8 tsp cinnamon
    1/4 cardamom (I omitted)
    1 cup Enjoy Life Foods vegan gluten-free chocolate chips or semi-sweet chocolate chips
    2/3 maple syrup or agave
    2/3 cup coconut oil, melted
    2 Tbsp almond milk
    1-2 tsp vanilla

    Heat the oven to 350 degrees Fahrenheit. Combine dry ingredients with the chips and wisk together to break up the lumps. In another bowl, wisk syrup, oil, vanilla and milk. Pour the wet ingredients in with the dry and stir with a wooden spoon until combined. Refrigerate the cookies for 10 minutes. Place in a cookie sheet lined with parchment paper and bake for 10-12 minutes. They are so rich and delicious! This recipe is from the cookbook Karma Chow!! Tony Horton is a huge fan of all the vegan recipes in the book and wrote the foreword. I highly recommend it! So many great recipes!!!  These gluten-free chocolate chip cookies are so very amazing, don’t hold back, indulge.

    Zucchini Noodles or other nutritious fillers, are such an important part of our weekly meal planning.  They are nutritious, filling and the kids eat them!!!!  I can hide them in all kind of different sauces.

    It’s so awesome when your sis and mom-in-law celebrate health, too!  These two little items were presents this Christmas!

    Since 80% of your results come from proper nutrition with your workouts, upping your veggie game is paramount??????

    Check out my new zucchini noodles maker, the Veggetti! It’s small so I don’t have to store a big appliance. Yay!!

    Project slim tummy for 2016 is already in full effect!  Don’t wait till January 4th to start making healthy decisions.  Do it now, have things like zucchini noodles, squash, and what not and find ways to make it easy like the Veggetti!

  • Gluten-Free French Toast! A Great Gluten-Free Breakfast!

    Gluten-Free French Toast!

    Need a fast warm gluten-free breakfast for the family? Gluten-free french toast is one of our favorites.   We always do what we can to add in a little extra protein into the kid’s diet.  It is hard to get them to eat eggs all the time, so between gluten-free pancakes and this gluten-free french toast, we sneak in the protein on a normal basis!

    Here’s what my fast mommy hands do:

    Wisk two eggs in a bowl and add:

    1/2 tsp of cinnamon
    1 Tbsp of almond milk
    1 tsp of vanilla

    I soak a piece of gluten-free bread (currently using Essential Baking Company from Costco) on both sides and then cook it for a couple minutes, each side, in a non-stick frying pan.

    Top it with maple syrup and cut for the kids. Warm, fast, healthy and YUMMY! Do you have any fast warm meals you throw together for your kids?#frenchtoast

    My Favorite Healthy Snack!

    My healthy snack today, I’m splurging on a tall Americano with one inch of steamed eggnog! This is a huge improvement from the FULL ON eggnog latte I used to order ?

    I’ve been thinking about what simple clean eating means to me. Especially when I see all these traditional Holiday foods that are packed with way more butter, breaded-ness, cream, milk, sugar than they truly need. I know it’s fun to splurge but for everyday dinners and meals, we can cut out the extras to preserve our waistline.

    Here’s what I have done to think outside the box:

    ? I don’t do butter on my gluten-free toast, pancakes, gluten-free french toast, just either some peanut butter and jam or just straight jam. We don’t do milk or mayo. Veganaise and almond milk replace them.

    ? When eating a healthy snack like veggies…..no more dips for my veggies or prepackaged dressings or spreads unless the ingredient list is short and clean!

    ?I pick and choose my carbs very carefully! No more sticky rice, breaded stuff, carbs late at night. Now it’s about grabbing a healthy snack like sweet potatoes and brown rice or quinoa.

    ? I do salads instead of sandwiches and tacos. Never underestimate the power of greens!!

    I seriously used to want every meal to be like a celebration. It had to have massive condiments and flavor, being exactly what I was craving. Luckily I got free from most of mine and realized that I can adjust my taste buds over time. Now for major Christmas FUN!! Only a few more days!???‪#‎salads‬#glutenfree ‪#‎cutouttheextras‬

    Remember that a healthy snack is relative to where you have been.  I have continually gotten better.  I used to have an eggnog latte with a bunch of whip cream on top.  Then this healthy snack became an eggnog latte with no whip cream.  Then this healthy snack became an eggnog latte with less eggnog!  Then, the healthy snack became an Americano with a fair share of eggnog added to it!  This year it finally became the Americano with one inch of steam eggnog on top.  It has a fraction of the calories it once had, and way less fat.  It is called an evolution and change of my body and mind.  I can drink this healthy snack, a steamed eggnog Americano with no guilt!!  That is the power of changing your health and nutrition from the inside out!  Now tell me how you have evolved with your healthy snack.

    It is not always easy finding quality tasting gluten-free recipes.  If you are looking for a yummy but also “healthy” treat to take to a Christmas gathering…look no further. This recipe even passed the husband and kid test, I’m in no way taking credit! The creator of the 21 Day Fix Autumn Calabrese put it in her new cookbook. ‪#‎genius‬

    FLOURLESS CHICKPEA CHOCOLATE BROWNIES – One of the Best Gluten-Free Recipes

    Makes 16 brownies and for better nutrients and taste, use all organic ingredients

    • 1 can chickpeas-rinsed and drained
    • 1/4 cup grass-fed butter or coconut oil, melted (by favorite brand is Tropical Traditions because it doesn’t have a strong coconut flavor)
    • 2 large eggs
    • 1/2 cup pure maple syrup or raw honey
    • 2 tsp. pure vanilla extract
    • 1/3 cup unsweetened cocoa powder
    • 1/2 tsp baking powder, gluten-free
    • 1 pinch sea salt
    • 1/4 cup semi-sweet or dark chocolate chips

    1. Preheat over to 350.
    2. Line 9×9 baking dish with parchment paper. Lightly coat with spray.
    3. Place everything except the choc. chips in a food processor or blender. Blend until smooth.
    4. Add c. chips and mix by hand.
    5. Evenly spread batter into prepared pan
    6. Bake for 25-28 minutes
    7. Cut into squares and enjoy!! If you use an 8×8 inch pan the brownies will be a thicker.

    1 square = 1 yellow container

    Kidding, today was actually better than yesterday. Had energy and focus and remembering all the healthy (and sweet) alternatives there are to gummy bears lol!

    ???The good news is-it’s PUMPKIN season!!!???

    Here is a fave! Grain-free, gluten free food, vegan, and they actually taste good!!

    1 can pumpkin
    1 cup chilled almond butter
    1/2 cup honey
    4 tsp pumpkin pie spice
    3 tsp vanilla
    2 tsp baking soda
    1 tsp coconut oil
    1/2 tsp sea salt

    Spray coconut oil spray in 8×8 baking dish. I used glass.

    Stir all ingredients until blended

    Bake at 350 for 20-25 minutes

    These gluten-free pumpkin bars are amazing.  Try to eat only one and make sure the family saves you one for the next day to have with your coffee. ?
