    21 Day Fix Meal

    When I started looking at food for FUEL instead of ENTERTAINMENT, that’s when my game changed and this 21 Day Fix meal is perfect.  Food has always been a trigger.  I had no real control of my portions, I had no control of what I was eating in general.  I ate “healthy” food while I was out and about, but would have a ton of dressing, or fries….when those can be the most damaging items for my transformation.  Maintaining consistency and moderation were the two essential keys to see change, that would last.

    ​I get to think of my meals in colors now, thanks to these handy-dandy-portion-control containers. I can eat a variety of meals and still have daily balance. Eating out is easy now because I can eyeball what my portions should be. ???? Knowing what you should do is most the battle we fight.  That was my main problem….I thought I was doing it right and yet I saw hardly any improvements.  I am not talking weight either; I am talking inches, pants fitting better, more energy and attitude change!  These are the portions I had with this 21 Day Fix meal.

    1 Red (cod)
    1 Yellow (organic brown rice)
    ​1 Green (broccoli)

    For my specific plan in the 21 Day Fix Extreme guide, I get 3 greens a day, 4 reds and 2 yellows. Some other colors too ???but you can tell that losing weight does not mean starving yourself. It’s actually quite the opposite.  So many women I talk to feel they need to eat less to accomplish their goals!  This is so far from the truth, most the time!

    Finally, if you are looking for more recipes, Fixate is a great recipe book.  It has a ton of meal plans and gives you the container amounts you need.  I recommend it for any 21 Day Fix meal plans you might want to make.  And when you get to use your daughter’s princess salt and pepper, everything tastes better ?

  • Superfood Dessert Bites – Cheating Healthy!

    Superfood Dessert Bites

    So, it’s in the evening, and you’ve already eaten dinner…  You had a super busy day, finally got the kids to bed, just did the laundry, still doing laundry, with a hamper full of even more laundry.  You need to go to sleep, but that ain’t going to happen, cause mama’s got a sweet tooth and needs something now.  You get into the kitchen, notice you need to do the rest of the dishes….. so what do you do?!!

    A.  Go crazy on chocolate chips, your kid’s snacks, or a multitude of other things you could eat.

    B.  Wine…..the entire bottle!!!

    C.  Superfood Dessert Bites!!!!!!!  🙂

    Superfood Dessert Bites Recipe

    This is about as easy as it gets.  (*Note, I am showing the recipe to fill an entire tin of mini cupcakes.  I fill each tin slot about half full.)

    • Chocolate Vegan Shakeology Scoop (3)
    • Melted 1/4 Cup of Coconut Oil (3)
    • Organic Peanut Butter Creamy (as much as you’d like to place on top.  I do about 1/2 a teaspoon per bite.)
    • Freeze for approximately 20 minutes or until hard.
    • Add peanut butter and then leave in freezer.
    • Remove from freezer when going crazy!  Eat one or two and you will feel 1 million times better and not eat a bunch of junk!!  😉

    About to freeze these babies for 20 minutes and then add peanut butter on top to freeze again.

    These little superfood dessert bites are about as good as it gets to curb the sweet tooth craziness.  I really try to go to these before anything else and they can be a lifesaver.  Sometimes I will add a little bit of organic cacao powder  into the mix.  This gives it a little more of a natural chocolate flavor, which I love.  The bonus, my family loves them!  They count for a couple teaspoons on our 21 day meal plan. 3 words..#boom #shaka #laka✌?️

    Weighted Sumo Squats for the Win!

    Day 8 // Done. Weighted Sumo Squats. Love the feeling of this move because of the turned-out-toe position. Talk about an inner thigh reconstructor! Operation Get Fit is more of a: Get my booty off the back of my thighs! ?  21 Day Fix Extreme is no joke!

    Working our legs burns a ton of calories because they are such large muscles. Just don’t mind me if you see me hobbling around town..they don’t call it an Extreme workout for nothing !

    I’m feeling good but still not exactly where I thought I’d be on day 8. You know that feeling of progress that feels so good? Yeah, well I’m still in the “feeling completely out of shape” stage! The cool thing is, I’ve been here before. I know that if I just fall in love with the process, my results will come. Cheers to all us girls that push past our limits and keep our eyes on the prize!

    21 Days to transform and make you a New You!!!

    Photobombed by the hubs ?? as I get prepped for the week with our simple containers.  Getting ready for the next 21 Days!

    I love being told how many to eat a day and what foods I get to choose from. ‪#‎mombrain‬ ‪#‎colorcoded‬. I also love the feeling of having energy and being strong ??. Two of the best things ever.  Well, that and being able to walk into your closet and put everything you own on, and it FITS!

    I didn’t always have these feelings though. Just a few years ago, I was lost in what to eat and what workouts worked best for me. Crash diets were my jam. It was a terrible place for me. Since then, I’ve found the “secret” to fit mom SUCCESS and I can’t hide it. The fire in my soul to help other women find what works for them is lit. ? I want you to have everything you’ve wanted with your health and fitness goals and the time is now!! Not in September when the kids go back to school.

  • Avocado Brownie Recipe! – Fudgtastic and Delicious!

    Avocado Brownie Recipe

    I can successfully say my desserts are all mapped out for the week ? Food prep is vital, right? I have a Paleo strawberry rhubarb crisp I’m making tomorrow and NO I’m not pregnant. Just love playing with desserts that have no harsh sugars in them like this brownie recipe.  But for realzies, this brownie dessert is the bomb and way easier on our “gut” than a box. Knowing the exact ingredients in our food is SUPER important!

    Check it:

    ~1 medium ripe avocado
    ~1/4 cup melted coconut oil
    ~1 large egg
    ~1/2 cup maple syrup
    ~1tsp. vanilla
    Blend it all up and then add in the dry ingredients:
    ~3/4 cup cocoa powder | unsweetened
    ~1/4 Pamela’s GF Baking mix or GF flour
    ~1/2 sea salt
    ~1/3 cup dark choc chips

    Preheat oven to 350. Line an 8×8 baking dish with foil. Spray foil with cooking spray. Pour into pan and bake for 33-36 minutes until done. I let the kids decorate their brownie section with tiny marshmallows and it came out yummy.  Not only did they like it…but they loved it!  So did my hubby.  This was his one dessert for the week and he demolished it!  I didn’t know if it would be very good, but it was a hit and we will be making it again.  Remember, as in all things moderation is the key.  I didn’t have 3 servings, I had one.  So make sure you protect yourself and only eat smaller portions.  This could work for the 21 Day Fix meal plan, but you can only have a small amount because there is a lot of fat.

  • The LOVE/HATE Relationship of Food Prep!

    Okay maybe I hate food prep a little more than I want to admit, but it’s so worth having it done. I’m happy when I have fast healthy choices for me and the family.

    Here’s what I just did:

    ✅  Cut and washed the romaine and kale.

    ✅  Cooked two types of organic sausages.

    ✅  Prepped the taco meat and used one package ground turkey mixed with one package ground turkey breast.

    ✅  Baked paleo pumpkin muffins for the kids breakfast and before bed snack if they are begging for more food ? (recipe on my Instagram)

    Here’s our menu for the week:

    Monday: Tacos

    Tuesday: Roasted brussel sprouts and almond flour breaded chicken tenders with Fixate Cookbook, honey mustard dressing dip

    Wednesday: Kale salad and sausages

    Thursday: Udi’s GF cheese pizza (my late work night) with green beans

    Friday: Sweet potato fries and leftovers of their choice. We usually do popcorn for our movie night, too!

    Now to enjoy my strawberry, goat cheese, walnut salad..???‪#‎phew‬‪#‎foodprep

  • Transformation Tuesday! Talk about Weight Loss!!

    Transformation Tuesday!  Are you Kidding ME?!!!!!

    My girl, Jenn Anderson, has gone crazy and done 4 rounds of 21 Day Fix and has been having Shakeology daily.  This is the result!  Consistency is the key with the right tools.  No crazy diet, just moderation and eating the right food daily.  Way to go Jenn!!  Here’s what she had to say:

  • 22 Minute Hard Corps Test Group is Getting Serious!

    22 Minute Hard Corps Update

    22 Minute Hard Corps is now into week 4 for my husband Matt!  I am going to have him tell you all about it!

    “Wow….all I can say is WOW!!!  22 Minute Hard Corps has to be the best workout program I have ever done.  I have done Body Beast, P90X, Insanity, T25, 21 Day Fix, 21 Day Fix Extreme, P90X2 and P90X3.  I have done half of Hammer and Chisel, got interrupted when I was rudely invited to do this test group, by corporate Beachbody!!  So here I am.  Already through an entire three weeks and I cannot believe how much my body has changed!

    I am already down 13lbs and down over 7.5 inches…..most of the loss is in my waist and chest…my two hardest areas to tone.  I have never had good definition in my abs and they are on there way to be the best I’ve ever had…..and it’s only been three weeks!!  This is an eight week program!  It is difficult though.  There are awesome modifications, so no worries there, but it is fast pace.  Tony Horton, the man, really takes this workout program to an entirely new level!!  He makes 22 Minute Hard Corps the extreme.  If you are already in shape….this will challenge you.

    I would say I started this program in decent shape, or so I thought.  As soon as I began, I knew I was going to have to dig deeper than ever before.  I thought I could jump right through 22 minutes!  I mean common….it is only 22 minutes!!  Nope, it is awesome.  Here is a little example of one of the moves.  I could probably do 3 or 4 of these at the beginning, now I can do over 20!!

    This last week, my wife had to go through a 3rd surgery, the 3rd in the last 3 months!  It has been a challenging time.  The thing I always forget is that when you are doing a full body, cardio, circuit style training, you not only gain muscle, but you gain so much energy!  Energy has just gone out the roof.  I have had so much fun playing with my kids at night…we will rough house for up to 3 hours after dinner!  I used to be gassed after an hour!  22 Minute Hard Corps is really changing my life.  I am feeling so amazing!

    I also did have a slight setback…but I didn’t let that get in my way.

    22 Minute Hard Corps Nutrition

    This is the part that I needed a lot of work on.  Prior to 22 Minute Hard Corps I had been trying to bulk.  At the beginning of 2015 I was doing Body Beast.  21 day fix, 21 day fix extreme, 21dayfix, 21dayfixextreme, 22 minute hard corps, 22 minute hard corps test group, 22 minute workout, 22minutehardcorps, alcohol, Beachbody, body beast, get some, getsome, gluten-free, Hammer and Chisel, orgain, p90x, p90x2, p90x3, Recharge, sugar, t25, tony horton, Tony Horton 22 minute hard corps, Tony Horton new workout, vega, vegan protein shake I am a tall 6’7″ man.  Getting meat on my bones has not been easy, getting fat is.  I can gain weight quickly.  I decided to really work on it all of 2015.  I did one full round of Body Beast, then almost all the way through a second round.  After that I began doing a lot of circuit training with heavier weights.  This meant one main thing.  Food and lots of it!  Definitely mostly healthy but definitely not perfect.  I was averaging between 3500-4500 calories a day.

    With 22 Minute Hard Corps I have lowered my calorie count to around 2400-2500 per day.  I am having a ratio of 1:1 protein to my weight, higher fat and middle of the road carbohydrates.  I have Shakeology (learn more about it here) once a day, sometimes twice depending on how busy I am.  I really do mix macros and 21 Day Fix food containers.  It is a perfect balance.  The nutrition is so very important to me.  I am having only natural sugars through some fresh fruit and occasional dry fruit.  I am not drinking alcohol right now.  There comes a point when you just want to see what your body is capable of and how it will react.  I am trying to eat six meals a day.  I try to keep my yellow containers to no later than 4:00PM.

    This is also the part that I have to have the most discipline with.  Late night snacking has always been an issue for me.  Through this time I will only have Recharge (learn more about it here), an amazing Beachbody supplement or a Vegan protein shake.  I do have whey protein as well, but very minimally.  I use both Vega and Orgain protein powders.  I tend to stay away from animal products because I am having a decent amount of meat.  I always try to have greens with my meat, the fiber will help with digestion.  I also have a staple kale dish I have almost everyday.  I am continually tweaking it.

    22 Minute Hard Corps Continues

    I can’t wait for Stacy to join me.  I know she would be doing far better than me at this point.  Her crazy physical craziness, (you can read about it here, and here) have really taken a tole on her and I can’t wait for her to be back at it!  I need my partner keeping me focused!  I have one of the workouts down fully.  I can do every move all the way through and am now cutting out some of the rest times….don’t worry, their not very long!  I still modify pull ups and chin ups, since I still can only do a few.  It is fun to see the progression!  It is amazing to be in a challenge group, where everyone posts and we are all a team, focused on getting results!

  • Taco Salad, Keeping it Healthy!

    I’m sure we can agree tacos might be our favorite meal! I used to hit up Taco Bell twice a week! In fact, while I was pregnant with my first child, Matt and I had the tough decision of where to eat on break from our birth training class ? Would it be McDonald’s or Taco Bell?  Taco Bell won, but it was a close call.

    We haven’t had fast food since Jude was born 3 1/2 years ago. It was a personal decision to just say goodbye forever and never look back. We feel SO much better! Those gut bombs are not worth it!

    So now, I make a taco salad and pretend it tastes like a double-decker, lol.

    Taco Salad Recipe

    ✔Swap out the tortilla for a bed of lettuce
    ✔Swap the sour cream for high protein Greek yogurt
    ✔Swap the cheese for lots of salsa and jalapeño
    ✔Swap the fatty beef for turkey (I like to mix one pack of ground turkey breast and one pack of regular turkey)
    ✔Swap the MSG filed taco seasonings for you own seasoning blend. Mine is from the 21 Day Fix

    This is a slim tummy recipe as compared to a bloated sad tummy. Tag a friend you wanna eat taco salad with??!!!

  • A Healthy Meal for the Whole Family!

    A Healthy Meal that Really is Healthy!

    Having a healthy meal, that is a “go-to”, that the whole family loves, is hard to come by.  Healthy meal plans are a labor of love.  This journey is never ending and that means being on the lookout or experimenting should always be in the cards, to find a new healthy meal.  The BEST meal we’ve been having lately.

    Here’s my husband talking about his favorite dish that he came up with!!

     Healthy Meal Recipe:
    • 2 Tablespoons of Tropical Traditions Virgin Coconut Oil. (This is the best coconut oil we have found.)
    • Melt coconut oil down, turn heat to medium or medium low.  (Otherwise you will be doused by hot coconut oil when you add the next items!)
    • Add 8 cups of kale, mix and make sure the coconut oil is evenly mixed up, stir every 30 seconds or so for about 3 minutes.
    • Add some Himalayan Salt, amount is up to you!
    • Add 1-2 teaspoons of Sriracha or other flavor you want to add.
    • At this point vegetables should be braised down and really soft.
    • Add 4-6 organic eggs or 3 eggs and egg whites.  Matt adds 1.25 cups of egg whites for more protein and less fat.  (The jury is out if it is really that bad to eat whole eggs.  Very debatable.)
    • Turn up heat a bit, mix and brown as much as desired.

    We buy Safeway’s organic pre-washed and cut kale. It has stems in it still but they get soft in the cooking process.  We eat this healthy meal once a day and it kind of depends on the day if it’s breakfast, lunch or dinner.

    Did you know kale has more calcium than milk and more iron than beef? ‪#‎craziness‬
