Jan 11 2016 ❤❤ FIT MISSION BY VALENTINE’S DAY ❤❤
Fit mission in full effect! Today I was reflecting on all the things us ladies can wish we had (me included). We aren’t trying to be perfect by any means, but feel comfortable in our own skin! Here’s a few things I am working on, you can take from this list or put your own! (I know we are all at different stages of our journey!)
Examples being:
- Rounder booty (or a booty at all)
- Thigh gap
- H.S. Weight
- Flat tummy (with less loose baby love skin)
- To look good nakey
- More confidence
- More time
- No dimples and cellulite
The list goes on…
Even if we can’t have those things exactly how we want them, the one thing I know to be true is we can get better! This fit mission is about this and that in itself is a beautiful thing. Practice does make perfect, goals can be reached! Do I wish I could get to my H.S. weight? Yes! But does that make or break the progress I’ve made? NO! 140 lbs is PERFECT for me because that’s what my body likes naturally. There was a time I couldn’t get under 150 to save my life. I skimped, starved, worked out twice a day, felt so lost with fitness AND nutrition. It was unnerving and I was hurting myself mentally and physically.
Not anymore thanks to the nutrition and programs I’ve found. Now I’m right where I need to be.
I had to trust the process and invest for the long haul and boy it’s paid off. Sanity is a good thing 😉

?Healthy Pesto Recipe?
Our families favorite meal! This healthy pesto recipe is the best meal. If you want something clean and fancy for dinner this weekend, you’ll love this! It is not just any recipe. We have been having this one at least one to two times a month for a few years now. We all love it. My son, my daughter and especially my husband. It also makes pretty good left-overs.
I want to talk about basil. I have included a break down the health benefits from Dr. Mercola.
“Basil also is considered one of the healthiest herbs. It’s best when fresh, exuding a sweet, earthy aroma that indicates not only the promise of pleasantly pungent flavor, but an impressive list of nutrients. Vitamin K, essential for blood clotting, is one of them. Just two tablespoons of basil provides 29 percent of the daily recommended value.
Basil also provides vitamin A, which contains beta-carotenes, powerful antioxidants that protect the cells lining a number of numerous body structures, including the blood vessels, from free radical damage. This helps prevent cholesterol in blood from oxidizing, helping to prevent atherosclerosis, heart attacks, and stroke.
Other vitamins and minerals in basil include iron, calcium, manganese, magnesium, vitamin C and potassium. Not surprisingly, basil also has antibacterial properties and contains DNA-protecting flavonoids. It’s the flavonoids and volatile oils in basil that give it the most health benefits, the former protecting on the cellular level, with antibacterial properties related to its volatile oils. Among these are estragole, linalool, cineole, eugenol, sabinene, myrcene, and limonene, all capable of restricting the growth of numerous harmful bacteria, including listeria, staphylococcus, E. coli, yersinia enterocolitica, and pseudomonas aeruginosa.
Some antibiotic medications which have been found to be resistant to some of these strains have been inhibited by basil extracts. One of those oils – eugenol – can block the activity of the harmful enzyme cyclooxygenase (COX). This same effect puts basil in the “anti-inflammatory” category because it provides relief from related problems, such as rheumatoid arthritis.”
Basil is something that I really think is important to add into our diets on a normal basis. I also use the basil essential oil with an infuser in our house about once a week or every other week.
Healthy Pesto Recipe
- I buy Trader Joe’s live basil plant because it’s the best price in town. Rinse and tear leaves away from the stem. I use the whole plant.
- 2 Tablespoons of pine nuts
- 1/4 cup of shredded Parmesan (or) a vegan option is nutritional yeast. You can find it in the bulk section.
- 1/4 cup of olive oil
- As many garlic gloves as you want. I usually do 3-4
- Salt and pepper
That’s it! The best healthy pesto recipe out there!! Blend everything in a food processor and mix with your favorite brown rice noodle or gluten-free pasta and you have delicious pesto pasta dinner. Oh, zucchini noodles could work for this too! Yum! It’s amazing topped with thinly sliced broiled chicken and a few extra pine nuts sprinkled on top. Jan 09 2016 Being a Busy Mom…How do we do it?!
The Busy Mom
Who reading this is a busy mom?!! I don’t think there is such a thing as not being a busy mom. Busy is our middle name. If I’m not doing laundry, cleaning, calling, emailing, texting, picking up toys, helping with homework, cooking, cleaning some more, breaking up a fight, counseling, drinking wine……..you get my point and I’m sure you can relate! Oh I forgot going to the grocery store, paying bills, doing makeup (randomly), driving to school, picking up from school, you name it…..we do it. We don’t know any different but it wears on us and at times we can get lazy….at least I can.
Then, while you’re doing all the things above, cause none of us are a busy mom at all, we get the, “Mom, mom, mom, mom, mom, mom, mom, mooooooooooooooom!!!!”, about 50 times a day! 😉 We are distracted all the time, interrupted and everything in between. It is not easy being a busy mom, for me of two kiddos. I can’t imagine those of you structuring life with more! I applaud you!
But we have to remember something. Being a busy mom is not an excuse, it’s a reason????? They watch you, they pick up your habits, they need you to help them learn why they eat veggies. None of us are perfect but we can sure try. It may feel like survival mode for a bit but then it becomes easier and easier. See, I catch myself getting impatient. Instead of giving my kids broccoli, I put a gluten-free frozen pizza in the oven because it’s easy. Is there anything wrong with the pizza? No. But in this mindset it could be setting the wrong example for our kiddos. They see me being tired and I do the easy thing. I don’t want them to do the easy thing. I want them to give life their all! Their best! To be excellent.
So let’s encourage each busy mom to push through. Whether we are a “working” mom with a job or a “working” stay-at-home mom with a job ;), we all have to keep pushing one another! We need to remember the little guys and push through for them. Keeping focused on allowing them to see us push through as we press on to be the best busy mom we can be! I love working with women to be their best. A lot come to me having given up one of their most important strengths…their health. Are you someone that is fighting that?! That’s my specialty! Supporting a busy mom that has allowed the “crazy” to creep in a little too far. Trust me….I’ve been there, we all have. Don’t let another day pass you bye!! And for the record, the loose stomach skin we have from babies actually looks and feels tighter when our body fat percentage goes down!!! Mine fluctuates and I can really tell. It’s crazy! I call it love skin?? we love why we have it and hate it all at the same time. #loveskin #momlife

A Healthy Meal that Really is Healthy!
Having a healthy meal, that is a “go-to”, that the whole family loves, is hard to come by. Healthy meal plans are a labor of love. This journey is never ending and that means being on the lookout or experimenting should always be in the cards, to find a new healthy meal. The BEST meal we’ve been having lately.
Here’s my husband talking about his favorite dish that he came up with!!

Healthy Meal Recipe:
- 2 Tablespoons of Tropical Traditions Virgin Coconut Oil. (This is the best coconut oil we have found.)
- Melt coconut oil down, turn heat to medium or medium low. (Otherwise you will be doused by hot coconut oil when you add the next items!)
- Add 8 cups of kale, mix and make sure the coconut oil is evenly mixed up, stir every 30 seconds or so for about 3 minutes.
- Add some Himalayan Salt, amount is up to you!
- Add 1-2 teaspoons of Sriracha or other flavor you want to add.
- At this point vegetables should be braised down and really soft.
- Add 4-6 organic eggs or 3 eggs and egg whites. Matt adds 1.25 cups of egg whites for more protein and less fat. (The jury is out if it is really that bad to eat whole eggs. Very debatable.)
- Turn up heat a bit, mix and brown as much as desired.
The oil makes the kale leaves crunchy? #yum
We buy Safeway’s organic pre-washed and cut kale. It has stems in it still but they get soft in the cooking process. We eat this healthy meal once a day and it kind of depends on the day if it’s breakfast, lunch or dinner.
Did you know kale has more calcium than milk and more iron than beef? #craziness
(Yes, the kids love it too) #eatyourgreens This is one healthy meal you do not want to pass up!

Cute Makeup Ideas
When you cry your eyes out the night before your 5 year old goes to Kindergarten, the eyes get a bit puffy? and it’s time for cute makeup ideas! To combat that puffiness, matte medium -dark eye shadow helps a ton. I like dark brown for blue eyes and dark grey for brown eyes.
Today was Nars Coconut Grove eye shadow with Laura Mercier BlackTight Line for liner. Anything with shimmer would have made my puffiness shine like the sun.
After drop off, I went immediately to Target to buy something I didn’t need. I also made my bed because somehow that makes me feel better heehee. For more makeup ideas go check this post I wrote awhile back about primer and foundation!

22 Minute Hard Corps Test Group
I am so excited that my husband, Matt Rody, was invited into the 22 Minute Hard Corps test group! He took all his photos, did a fit test to see where he’s at, we did a bunch of meal prep and kicked it off today, January 4th, 2016! He is committed and seeing his commitment is pushing me! We are both focused and doing our part to really spread the joy of health with everyone around us! Here is what he had to say:
“Well, it’s almost here! I am so incredibly humbled and so honored to be in the official test group for 22 Minute Hard Corps. The people in this group are much more qualified than me, so I will be pushing myself harder than ever before!
As I move forward on this amazing journey, I would love to bring you along with me. I’ve never been perfect, I’ve never tried to be. But I know I have to work hard to be the best husband, father, friend, son, brother, business partner and whatever other shoes I am called to fill.
I won’t try to pretend I don’t yo-yo on the scale a bit, but I have found a very sustainable place in my health and nutrition. I always have energy to throw my kids around and chase them for hours. That’s why I did this. That’s why it’s stuck for almost 4 years now.

Jan 03 2016 Meal Prep, It’s Soooo Important!
Meal Prep Monday!
Just got done with our meal prep! The hubby started his Test Group for 22 Minute Hard Corps today. I’m doing 5 days of clean eating with my girls!! Here’s the meals we are rocking for a few days:
?Baked butternut squash 1-?
? Steamed broccoli 1-?
? Broiled chicken 2- ❤ red containers
Shakeology is a protein (❤) and avocado, cheese or hummus is a healthy fats (?)
Meal prep was not always easy and still isn’t. It is a learned discipline and I still fight it. I don’t want to prep meals for the whole week, but I know that I, and my family, have a good chance at failing if I don’t put in the work on Sunday! So, I meal prep…no matter what. Sometimes my husband helps me, other times, he takes down Christmas decorations like this time! We try to work together and be productive.
I really think it has helped my husband a lot. Meal prep really sets the tone for him, so that he doesn’t snack. It also keeps me from going to the grocery store and buying a ton of items that are not on my list. It keeps me focused. Using the little containers with the three slots really helps too. I know I need a high dense carb, a nutrient filled vegetable, and some serious protein. I get the containers on Amazon, here is the link! The grocery store’s got nothing on me! I come prepared.

I Hate, with a capital “H”, counting calories so thinking of food in colors is way more up my alley. Love this!!! Go get your meal prep done and feel good about the week ahead. Don’t procrastinate, or it will hurt your goals. This is a hard lesson I had to learn, but it has made all the difference, not only my life, but my family’s as well!

Gluten-Free Lunch Ideas!
Holla back ya’ll, you better believe I have delicious gluten-free lunch ideas ready to go! I always try to balance out my salads with a few different ingredients. I love adding fruit. Lunch is served. 2 ?‘s 1/2 ? and 1 ? This is chopped romaine, chopped celery, grapes and hemp seeds. Not excited about the celery but I’ll deal with it!.
Put the other half ? in my superfood shake (Shakeology), that counted for a ❤(protein). When you don’t have any meat prepped, this is what you get. Couldn’t do the 21 Day Fix without my shakes!

Gluten-free Chocolate Chip Cookies!!!
I know there are a ton of family tradition-style cookies being made this time of year -but if you want a treat to have that is on the healthy side, these gluten-free chocolate cookies will do the trick! They freeze amazingly well, too!! I bet you’ll have all these ingredients in your kitchen right now so no need to brave the grocery store. I love finding simple recipes that are easy to make and that my kids continually love! I am always looking for new ones. It is not easy finding gluten-free snacks that my kids can actually eat and this is one that works. Give it a try, you will not be disappointed!
Gluten-Free Chocolate Chip Cookie Recipe
2 cups oat flour (I took gluten-free oatmeal and blended it in my Blendtec blender)
3/4 cup rolled oats
1/2 cups chopped walnuts (optional)
1/2 tsp sea salt
3/4 tsp baking soda
1/8 tsp cinnamon
1/4 cardamom (I omitted)
1 cup Enjoy Life Foods vegan gluten-free chocolate chips or semi-sweet chocolate chips
2/3 maple syrup or agave
2/3 cup coconut oil, melted
2 Tbsp almond milk
1-2 tsp vanillaHeat the oven to 350 degrees Fahrenheit. Combine dry ingredients with the chips and wisk together to break up the lumps. In another bowl, wisk syrup, oil, vanilla and milk. Pour the wet ingredients in with the dry and stir with a wooden spoon until combined. Refrigerate the cookies for 10 minutes. Place in a cookie sheet lined with parchment paper and bake for 10-12 minutes. They are so rich and delicious! This recipe is from the cookbook Karma Chow!! Tony Horton is a huge fan of all the vegan recipes in the book and wrote the foreword. I highly recommend it! So many great recipes!!! These gluten-free chocolate chip cookies are so very amazing, don’t hold back, indulge.
