  • Gluten-Free Lunch Ideas! Veggie Soup on the Go!!

    Gluten-Free Lunch Ideas

Being gluten-free, I am always looking for gluten-free lunch ideas.  I am going to be consistently looking for more an more simple ideas, that you can buy while on the go.  I find that almost anyone can make gluten-free lunch ideas at home….but what about at work or while out with the kids.  Here is one I love!

Veggies are so hard to get in when life is crazy busy. We live by eating whatever is in front of us in this fast paced life.  Fall ?and Winter❄ are so great for soup and you can hide tons of veggies in a yummy way.  The other reason I love it?  My kids will eat it!  You can’t beat that!  Finding food that my kids will eat that is healthy for them, on the go, is a win-win in my book.

This is a hearty veggie soup with kale, carrots, potatoes. Yum!!!!!  It is at Metropolitan Market.  This is one of my all time favorite grocery stores.  They have all kinds of unique items.  The market actually labels which soups are gluten-free.  It is so nice to quickly jump in the store, pick up what I need and then pay and get back in the car, within five minutes.

Do be careful.  A lot of the canned soups are not that healthy and can have hidden junk in them.  Make sure to always read the labels.  A lot of gluten-free items are made with quality ingredients, but I am seeing a trend of more and more that are not good.  It seems like we can never get away from the junk!  So, I will continually search for gluten-free lunch ideas.

Do you have a favorite “go to” soup? I would love to hear it!!  This time a year, I start making them weekly.  They are great to have for leftovers.  Comment with a recipe of the one you can’t live without!

  • Weekend Weight Loss Tips!

    Weekend weight loss tips:

Use these weight loss tips.  Don’t turn your back on your goals this weekend.  I promise you’ll regret it. I’ve done this way too many times and I always feel super bummed on Monday. You work so hard during the week and the weekend should be fun but still in alignment with your goals. Here’s some weight loss tips for you:

    1. Do an extended cardio session. ?Take a long walk or run and get your mind ready for the week ahead.

    2. Give yourself one treat meal and enjoy it -guilt free. ??Make sure your other meals are fueling you and you’re also getting your water in. I get just on the weekends and let my meals/water take a back seat. Keep track and focus on it.

    3. Spend time prepping and shopping for the week ahead. This will save you more time and energy on those busy weekdays. Cook some meats, cut veggies and pre-cook rice or quinoa.

    4. Catch up on sleep, don’t deplete it. Proper sleep helps your body fight sickness and repairs it for better workouts.

❤Have so much fun but keep those goals in the back of your mind!! It is not an easy road at all but an ever so necessary one..  It is also not at all something you want to skip.  I have skipped it many times and have suffered the consequences.  I love having accountability!  Having a group of women, pushing you on is so important.  I know you can do anything, I’m your biggest fan! ❤

Remember that moderation is a huge key as well.  I seem to always forget to mention this one.  Just keep things palm sized.  You don’t need your entire arm!!  Keep up the hard work and dedication.  Thanks for checking out my weight loss tips.

  • Transformation Tuesday from Quebec!

    TRANSFORMATION TUESDAY!

Genevieve blows me away with this transformation Tuesday! She is a full time working mom and takes pride in her health every day. Here is a peek into her story and life ——->>>>>

“I did not lose much, less than 10 pounds. But the daily balance is my best tool to measure my progress. I prefer to look at how my clothes fit, take my measurements and some pictures. I’ve worked out for about 20 years, many years of running and gyms. I will be 40 soon. Honestly, I have never felt so well and healthy since I discovered Shakeology. The nutrients keep me going on the days I don’t have time to eat breakfast or lunch. The battle is a daily one. It’s not easy but I have to say I look and feel better than I ever have.”

Her French text says “I am too tired, I have a busy week but I can do it!! ”

Excuses don’t lead us to our final destination. Avoiding them is what takes you places. If you mess up, know there will be another opportunity to make a better choice. Get back on the right path and don’t worry about being perfect. Even if it takes longer than you thought, keep running to your destination.

I feel the exact same way as her! The daily habits are the ones we master, not getting on the scale. I love to brag on my fellow team mates because they work so hard not only on themselves but with all of their clients.

Well done my friend and thank you for letting me share part of your journey. I wish we lived closer!!! Maybe a trip to Quebec is in order someday soon XO  Another successful transformation Tuesday thanks Genevieve…you inspire me!

  • Read the Nutrition Label! It is Important!

Nutrition Label and Dried Fruit 101:

I was in Costco (again) ?today and wanted to make a post to explain the importance of reading a nutrition label. On the left is your average dried fruit. Refined sugar and yucky preservatives. I almost bought it before I flipped it over and read what was in it.

I can’t tell you how many times in my life I have not flipped my product over and read the nutrition label.  It is a failure I look to change.  I think it is putting it in my phone when I go to the grocery store, so I remember, and after a while it should become a habit.  But it is so important, because look at what you fine!

The one on the right is organic and only ONE ingredient. Just the way it should be. If you are going to pay the money you may as well get the best product. Your body will thank you! I promise it will! ????

  • Healthy Gluten-Free Lunch for the Kiddos!

    A Kid Friendly Gluten-Free Lunch

Oh school….how I miss my baby girl!  She is in all day kindergarten and I have to come up a gluten-free lunch everyday.  It has killed me to not hear her beautiful melodic voice throughout the house during the day.  To watch her color a drawing, running over to me to have me give her approval, then squealing with joy when I say I love it. I will miss watching her mumble to herself as she plays with her toys, in her own little creative world.  I will miss those feet stomping through the house as she is focused on finding this or that.  Okay…enough of my mommy depression!! 😉

After about two weeks of gluten-free lunch packing, I have gotten a bit better. Here is a look into what Sam eats:

    Applegate roasted turkey
    Van’s gluten-free cheese crackers
    Strawberries and Cucumbers

But the best part is……..frilly toothpicks! They make it more fun.  Finding those little things that make it special are Sam and my special little bond.  She loves those little things as much as me!  My husband just roles his eyes, but it is so amazing to see that little sparkle in her eyes.  She has even mentioned it when she gets home after the long day.  It makes it so worth it!

Oh, and she’s a true girl which means a little dark chocolate to get her thru the day ???

  • Getting the right Nutrition with Shakeology!

    Nutrition with Shakeology

This mama does not have time to worry about getting a ton of veggies in as I run the kids around all day. I also don’t have time to get sick. Since we’ve been drinking this yummy goodness for three years straight, our household has been way healthier. Sure we get sick but it lasts 2 days not 5-6.  Shakeology has been a godsend.  It really has had a major impact.  Some the other things we have noticed is our hair growing faster, nails growing quicker and stronger, better sleep and much more regular bowel movements!  Yep, I said it.

I believe that food can act like poison to our bodies or it can heal and fuel them. I’m just passionate about sharing what I love and what has maintained our weight.  Shakeology is something we have everyday.  My husband, my kids and myself.  If we do get sick, we usually have it twice a day.  It is a non-negotiable in our household and a great way to get 70+ superfoods.  It also is a meal replacement.  I actually have it for breakfast most the time and it works great!

No more yo-yoing. No more fad diets. Just simple nutrients. Wish I would have known about it sooner. #payitforward #healthfirst #fivebucksaday #usedtospendmoreonTacobell

  • A Simple and Quick way to Prepare Roasted Asparagus!

    Roasted Asparagus Tip!

Roasted Asparagus is one of our favorite veggies. If I don’t watch my plate, my daughter will sneak extra for herself!  My husband wants to eat his portion as well as everyone else’s and our son eats it right away….it is magical!

I break off the hard ends, drizzle a little avocado oil on them and sprinkle Trader Joe’s garlic salt. I stick them right on the top rack of the oven and broil at 500 for about 5 minutes. You have to watch them. I heard it said once, “You don’t actually cook asparagus-you just threaten to cook it.” ?  It really is the most simple meal.  We have roasted asparagus at least once a week, preferably two to three times per week.

There are some great vitamins in roasted asparagus, and if the kids like it, I’ll take it!  It is an excellent source of all kinds of vitamins and minerals.  I could try to explain them all to you, but I would rather have you hear it from the Nutritionist, Cheryl Forberg RD.  She is a New York Times best-selling author.  She is also the nutritionist for The Biggest Loser.  In an article “5 Powerful Health Benefits of Asparagus You Probably Didn’t Know”, she gives us a full breakdown of how great asparagus really is for us!

    1. It’s loaded with nutrients: Asparagus is a very good source of fiber, folate, vitamins A, C, E and K, as well as chromium.  Chromium is a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells.
    2. This herbaceous plant, along with avocado, kale and Brussels sprouts, is a particularly rich source of glutathione. This is a detoxifying compound that helps break down carcinogens and other harmful compounds like free radicals. This is why eating asparagus may help protect against and fight certain forms of cancer, such as bone, breast, colon, larynx and lung cancers.
    3. Asparagus is packed with antioxidants, ranking among the top fruits and vegetables for its ability to neutralize cell-damaging free radicals. This, according to preliminary research, may help slow the aging process.
    4. Another anti-aging property of this delicious spring veggie is that it may help our brains fight cognitive decline. Like leafy greens, asparagus delivers folate, which works with vitamin B12, found in fish, poultry, meat and dairy, to help prevent cognitive impairment. In a study from Tufts University, older adults with healthy levels of folate and B12 performed better on a test of response speed and mental flexibility. (If you’re 50-plus, be sure you’re getting enough B12: your ability to absorb it decreases with age.)
    5. One more benefit of asparagus: It contains high levels of the amino acid asparagine, which serves as a natural diuretic, and increased urination not only releases fluid but helps rid the body of excess salts. This is especially beneficial for people who suffer from edema (an accumulation of fluids in the body’s tissues). It is also for those who have high blood pressure or other heart-related diseases.

So there you have it!  If you weren’t eating roasted asparagus, or having your kids eat it, you now know what you’re missing.  You now know how amazing it is for our bodies!  So go have some amazing roasted asparagus.  Put something in your body that will change you forever.  Become more healthy.  Roasted asparagus fit perfect in a green container if you are on the 21 Day Fix!

  • Healthy Starbucks? Here’s how!!

    Healthy Starbucks Drink

I have officially broken up with my 1/2 pump white mocha americano with whip. To even think that I could have a healthy Starbucks drink….is crazy!  Who knew 2 inches of steamed coconut milk, 1 pack of honey and some cinnamon would be so dang tasty.  A whole new level in Starbucks nutrition! 😉

Upward and onward with making small but healthier changes all the time.  Are you kidding me?  Having a healthy Starbucks coffee is a dream come true!  And remember, having that whip everyday does add up.  It is compounding interest.  It doesn’t stop and it keeps going and going.  This is what has been so hard for me, with all my sugar

My prior overweight, binge eating, Taco Bell loving, candy addict self would hardly believe this is the new me.

  • Sugar Detox Day 1!! Let the Fun Begin!!

    Sugar Detox Day 1

Day one of my sugar detox, green tea and honey instead of coffee, dates as my candy, and Shakeology as my treat. My willpower is in full effect this week.  This is not even a bit easy for me.  I love eating junk.  A lot of us do!  I know I’m not the only one.  The thing is, we are what we eat…. and that sucks.  I used to be able to eat anything and the scale would stay the same, my pants would fit just fine.  Now, I feel like I have to stay on point to keep from gaining those extra pounds or barely fitting in my jeans!

Cheese, tortilla chips, peanut m&m’s and wine is what gave me this bloat ?

Dreams of skinny jeans and sweaters is what’s gonna take this bloat away.

Sometimes you just have to say “NO” for a bit. That’s what I tell myself as I struggle to stay strong. I’m also excited to sleep better and wake up with more energy. Wish me and the girls in my group luck with our sugar detox. We are going to keep accountable and really push through. You’ll have to join us if we do this again next month. ‪#‎powerinnumbers‬ ‪#‎girlpower‬

  • Gluten-Free Lunch, easy with the 21 Day Fix Extreme!

Gluten-Free Lunch Meal Prep, Easy and Quick

This is a gluten-free lunch, (cause I’m super gluten intolerant), that I think I’ve decided is my favorite food prep combo.  It is simple, healthy and is balanced in every way.  It fills me up perfectly and gives me energy for long lengths of time.  I love it.  Do you have a “go-to” meal that is balanced?  This one is also easy to make in bulk.  I can make enough to last a week and none of these items go bad super quickly, so it works out wonderfully.  Having it placed in my handy-dandy little food prep containers, it is a pretty easy scenario.

    1. Wild salmon {I buy the individually wrapped pieces at Costco}
    2.  Green Beans
    3. Roasted Sweet Potatoes
    4. *Cooked brown rice, grilled chicken and steamed broccoli is a close second.

Finding variation and little add-ons is so paramount to enjoying healthy food.  I don’t believe that I have to enjoy every bite I eat, all the time, sometimes I need to eat to get the right nutrients, but this mindset has come over time.  It has come from seeing what “always” enjoying food does to my body.  I really love this one though, it really is tasty and great for me.  Have you ever tried the garlic aioli mustard from Trader Joe’s? It is has no dairy and is actually one of the most amazing dipping sauces and a free food on the 21 Day Fix Extreme!!

If you’re not familiar with 21 Day Fix Extreme, I need to tell you how amazing this program is.  It is 30 minute workouts, you do at home, with little to no equipment needed.  It is intense, fun, challenging and comes with containers for meal prep as well.  It is one of my favorite programs and is perfect as a quick and hardcore 3 week, (get ready for an event) workout.  I know many of my clients do it multiple times in a row and have had great success.

Thanks for taking the time to read.  Please ask questions below, I love engaging and helping others with their health.  Gluten is no joke, so make sure you test to see if you have an allergy to it.  This gluten-free lunch, really does the trick.
